As the name suggests, Burnt Basque Cheesecake originates from the Basque Country, a region in northern Spain. In fact, it can even be attributed to a very specific bar. La Viña in San Sebastián's old town (renowned for its excellent food) is a small family bar and one of the city's most popular restaurants. It was here in 1988 that self-taught chef Santi Rivera experimented in La Viña's kitchen, creating the original, now-famous Burnt Basque Cheesecake.
