What makes this cheesecake special is that it has a dark brown, almost burnt, glossy exterior, while remaining rich and creamy inside. Some say this discovery was more by chance than intention - read more on that in a moment. What is certain, however, is that it tastes simply divine!
Where does Basque Cheesecake come from?
As the name suggests, Basque Cheesecake originates from the Basque Country, a region in northern Spain. In fact, it can even be attributed to a very specific bar. La Viña in San Sebastián's old town (renowned for its excellent food) is a small family bar and one of the city's most popular restaurants. It was here in 1988 that self-taught chef Santi Rivera experimented in La Viña's kitchen, creating the original, now-famous Basque Cheesecake.
What does Basque Cheesecake taste like?
There are countless superlatives to describe the taste of Basque Cheesecake. The first thing you notice is the texture and how wonderfully soft Basque Cheesecake is. The flavor is unbelievably creamy and has a slight acidity. The whole thing is rounded off by the burnt crust, which provides a deliciously caramelized finish. It's the combination of the toasted exterior and creamy center that sets Basque Cheesecake apart from all other cheesecakes.
Burnt Basque Cheesecake vs regular cheesecake
What distinguishes Basque Cheesecake from a regular cheesecake? There are three main differences. The first is immediately noticeable - the burnt surface. This happens because it is baked at higher temperatures and intentionally burned. The second difference becomes apparent when you cut into a slice. Unlike regular cheesecake, Basque Cheesecake has no crust or base. Finally, the texture inside is creamier and fluffier than traditional cheesecake, and the flavor is slightly sweeter due to the caramelization.
How to make Basque Cheesecake?
After extensive research, Ari - founder of ARI'S Bakehouse - came across an older recipe that is closest to the cheesecake from the bar La Viña. It's surprisingly simple to prepare, but you have to be very careful and make sure the cheesecake is well browned on the outside without drying out on the inside.
What goes well with Basque Cheesecake?
As a dessert, this cheesecake is a dream on its own. We recommend serving it slightly cool. Alternatively, serve it with fresh berries, ice cream or a light fruit salad.
How long does Basque Cheesecake keep?
Basque Cheesecake is so delicious that it's rare that you need to store it. If you do happen to have any leftovers, it will keep in an airtight container for about 3 days after baking. However, for optimal flavor we recommend consuming it within a short time.
Does Basque Cheesecake need to be refrigerated?
Yes, because it contains cream cheese and cream, Basque Cheesecake must be refrigerated. After you pick it up or receive it from us via delivery or shipping, wrap it in plastic wrap or place it in an airtight container in the refrigerator. It should then keep for 3 days.
Can you freeze Basque Cheesecake?
Yes, Basque Cheesecake freezes well and retains its full flavor and texture. It will keep in the freezer for up to 1 month. To thaw, simply remove it from the freezer 24 hours before eating and place it in the refrigerator.
